Aktivitas Hidrolis Protease Ekstrak Jeroan Ikan Mas Cypirus Carpio L)

Abstract

Protease are enzyme type which catalysis of reaction hydrolisis the protein by breaking tying peptides. This research aimed to isolation of enzyme protease from jeroan goldfish (Cyprinus carpio L) and determine the enzyme activity to decompose substrat. Here we report, protease activity from jeroan goldfish (Cyprinus carpio L) in which this result was found by reacting between substrat with the extract of enzyme protease with optimum condition : time of incubation 25 hours, pH 7 and temperature of incubation 50C. Determinan of enzyme activity by Spectrofotometry method and protein enzyme by Lowry method. Based on measurement, rude extract of activity enzyme is 0,343 unit I g protein and enzyme protein is 284, 124 g/ ml.
