Abstract: Kopi yang di hasilkan Usaha Mikro Kecil di Simalungun sudah dikenal oleh masyarat kalangan lokal maupun luar daerah bahkan internasional karena produknya begitu memuaskan dapat menyenangkan lidah masyarakat. Adapun latar belakang masalah dalam penelitian yaitu adanya kesenjangan harga Antara Biji Kopi dengan Bubuk Kopi. Penelitian ini bertujuan : 1. Untuk mengetahui besar nilai tambah keuntungan yang diperoleh produsen dari pengolahan bubuk kopi 2. Untuk mengetahui besar pendapatan produsen. Penelitian ini dilakukan pada tanggal 06 desember 2021 sampai 06 maret 2022 di pengolahan biji kopi arabika menjadi bubuk kopi di kabupaten simalungun. Sampel yang diambil dalam penelitian sebanyak 12 usaha. Metode yang digunakan adalah kuantitatif deskriptif dengan menggunakan metode hayami dan analisis pendapatan. Berdasarkan hasil metode hayami nilai tambah yang di dapat dari pengolahan biji kopi menjadi bubuk kopi sebesar Rp33.400/Kg dengan rasio nilai tambah sebesar 26,42 % sedangkan pendapatan yaitu sebesar 3.850.669/2 minggu. Maka dari hasil tersebut dapat disimpulkan Nilai tambah yang dihasilkan di kabupaten simalungun tergolong Sedang, yaitu sebesar Rp. 33.400/Kg dengan rasio nilai tambah sebesar 26.42 % hal ini dapat dilihat bedasarkan kategori nilai tambah agroindustri bahwasanya nilai tambah tergolong sedang yaitu berkisaran 15-40%. Sedangkan Pendapatan yang didapat tergolong tinggi, yaitu sebesar Rp3.850.669/2 minggu hal ini dapat dibandingkan dengan gaji Umr yang berlaku dikabupaten simalungun yaitu sebesar Rp 2.607.089. The coffee produced by Micro and Small Enterprises in Simalungun is well known by the local community as well as outside the region and even internationally because the product is so satisfying that it can please the public's tongue. The background of the problem in this research is that there is a price gap between coffee beans and coffee powder. This study aims: 1. To find out the amount of value added profits that producers get from coffee powder processing 2. To find out the amount of producer income. This research was conducted from December 6 2021 to March 6 2022 in the processing of Arabica coffee beans into coffee powder in Simalungun district. The samples taken in the study were 12 businesses. The method used is descriptive quantitative using the Hayami method and income analysis. Based on the results of the Hayami method, the added value obtained from processing coffee beans into coffee powder is IDR 33,400/Kg with a value added ratio of 26.42% while income is IDR 3,850,669/2 weeks. So from these results it can be concluded that the added value generated in Simalungun Regency is classified as Moderate, which is Rp. 33,400/Kg with an added value ratio of 26.42%, this can be seen based on the agro-industry value added category, that added value is classified as moderate, namely around 15-40%. While the income earned is relatively high, which is IDR 3,850,669 / 2 weeks, this can be compared with the Umr salary that applies in Simalungun Regency, which is IDR 2,607,089.
