Abstract: Telur merupakan sumber protein hewani yang mengandung nutrisi yang baik bagi kehidupan manusia. Telur mudah mengalami kerusakan baik kerusakan secara fisik, kimiawi maupun secara biologis. Penelitian ini bertujuan untuk mendeteksi keberadaan bakteri yang ada pada telur ayam ras dan telur ayam kampung yang dijual oleh pedagang di beberapa pasar tradisional kota Medan dan sekitarnya. Penelitian ini dilaksanakan dengan metode deskriptif kualitatif. Tahapan penelitian antara lain : penghitungan koloni bakteri, isolasi bakteri pada media selektif Eosin Methylene Blue (EMBA) dan Salmonella Shigella Agar (SSA) dan pewarnaan bakteri pengkontaminasi. Hasil penelitian menunjukkan bahwa, jumlah total cemaran bakteri pada 20 sampel cangkang telur ayam ras dan ayam kampung sesuai dengan standar SNI dan bakteri pencemar yang terdapat pada cangkang telur ayam ras dan ayam kampung yaitu Eschericia coli, Salmonella sp. dan Shigella sp. Pada penelitian selanjutnya diharapkan pemeriksaan bakteri pengkontaminasi juga dilakukan pada kuning telur ayam ras dan ayam kampung. Eggs are a source of animal protein which contains good nutrition for human life. Eggs are easily damaged either physically, chemically or biologically. This study aims to detect the presence of bacteria in purebred chicken eggs and free-range chicken eggs sold by traders in several traditional markets in Medan and its surroundings. This research was conducted with a qualitative descriptive method. The stages of the research included: counting colonies, isolating bacteria on the cleaning media Eosin Methylene Blue (EMBA) and Salmonella Shigella Agar (SSA) and staining the contaminating bacteria. The results showed that the total number of bacterial contamination in 20 samples of purebred and free-range chicken eggshells complied with SNI standards and the contaminating bacteria found in the eggshells of purebred and free-range chickens, namely Eschericia coli, Salmonella sp. and Shigella sp. In future research, it is hoped that the examination of contaminating bacteria will also be carried out on the egg yolks of purebred chickens and free-range chickens.
