Abstract: Penelitian ini bertujuan untuk menganalisa Strategi Pengembangan Usaha Olahan Ubi Kayu menjadi opak mentega, rengginang, dan mie yeye di Desa Sukasari Kecamatan Pegajahan Kabupaten Serdang Bedagai. Metode yang digunakan dalam pengambilan sampel ini adalah Purposive Sampling atau sengaja yaitu teknik untuk menentukan sampel penelitian dengan beberapa pertimbangan atau kriteria tertentu. Dalam penelitian ini Dari jumlah angka populasi sebanyak 60 ditarik sample secara sengaja (Purposive), sebanyak 30 pelaku usaha olahan ubi kayu, dengan pertimbangan pengalaman dalam usaha pengolahan ubi kayu yang mereka miliki sudah cukup berpengalaman ±7 tahun keatas, dan 9 sampel pengepul, petani ubi kayu, konsumen yang terlibat langsung untuk pengembangan usaha olahan ubi kayu . Terdiri dari 10 produsen opak mentega, 10 produsen rengginang, 10 produsen mie yeye 3 pengepul, 3 petani ubi dan 3 konsumen, dengan total sampel sebanyak 39. Permasalahan dalam penelititian ini akan dianalisis secara deskriptif kualitatif, analisis IFAS (Internal Factors Analysis Summary) dan EFAS (External Factors Analysis Summary) serta analisis SWOT (Strengths Weaknesses Opportunities Threats) untuk merancang strategi pengembangannya Hasil analisis SWOT menunjukan bagaimana usaha prospek pengembangan usaha olahan ubi kayu terletak pada Kuadran II (Diversifikasi). Situasi pada kuadran II merupakan situasi dimana produsen atau pelaku usaha memiliki kekuatan dan juga ancaman. Strategi yang harus diterapkan adalah memaksimalkan kekuatan untuk mengantisipasi ancaman yang muncul dirumuskan strategi untuk menentukan strategi produsen olahan ubi kayu yakni strategi Diversifikasi, strategi ini lebih fokus kepada ST (Strength and Threaths) yaitu memanfaatkan kekuatan untuk mengantisipasi ancaman yang ada. This study aims to analyze the Development of Cassava Processing Strategies into butter opak, rengginang and yeye noodles in Sukasari Village, Pegajahan District, Serdang Bedagai Regency. The method used in this sampling is purposive sampling, which is a technique for determining research samples with certain considerations or criteria. In this study, from a total population of 60, samples were taken purposively (purposively), as many as 30 cassava processing business actors, taking into account their experience in the cassava processing business, they had sufficient experience of ±7 years and above, and 9 samples were collectors, farmers cassava, consumers who are directly involved in the development of cassava processing businesses. Consisting of 10 butter opaque producers, 10 rengginang producers, 10 yeye noodle producers 3 collectors, 3 cassava farmers and 3 consumers, with a total sample of 39. The problems in this research will be analyzed descriptively qualitatively, IFAS analysis (Internal Factors Analysis Summary) and EFAS (External Factors Analysis Summary) and SWOT (Strengths Weaknesses Opportunities Threats) analysis to design a development strategy. The results of the SWOT analysis show how the prospects for developing a cassava processing business are located in Quadrant II (Diversification). The situation in quadrant II is a situation where producers or business actors have both strengths and threats. The strategy that must be applied is to maximize strength to anticipate emerging threats. A strategy is formulated to determine the strategy for processed cassava producers, namely the Diversification strategy, this strategy focuses more on ST (Strength and Threaths), namely utilizing strengths to anticipate existing threats.
