dc.description.abstractPenelitian ini dilaksanakan pada bulan juni hingga Juli 2023, adapun tujuan dari penelitian ini yaitu untuk menganalisis gambaran rantai pasok tepung tapioka dengan model Food Supply Chain Network (FSCN) dan menganalisis kinerja rantai pasok tapioka dikecamatan Dolok Masihul, Kabupaten Serdang Bedagai. Untuk menganalisis gambaran umum rantai pasok tapioca didaerah penelitian menggunakan kerangka Food Supply Chain Network (FSCN), sedangkan untuk menganalisis kinerja rantai pasok didaerah penelitian menggunakan metode Analytical Hierarchy Process (AHP) dengan aplikasi Software Expert Choice 11. Sampel di dalam penelitian ini terdiri atas petani (pemasok), pedagang pengumpul/agen, agroindustri tapioka (pabrik/industri), pedagang tapioka, home industri (konsumen). Yang terdiri dari 15 orang petani ubi kayu (pemasok), 2 pedagang pengumpul (agen), 1 agroindustri dan 7 orang pedagang tapioka dan 5 orang pelaku home industri (konsumen). Berdasarkan hasil penelitian yang dilakukan di daerah penelitian Secara umum, rantai pasok tapioka yang sudah berjalan di Kecamatan Dolok Masihul adalah Petani ubi kayu (pemasok) - Pedagang Pengumpul (Agen)– Agroindustri – Pedagang Tapioka – Konsumen. Dilihat dari hubungan proses bisnis yang berjalan pada daerah penelitian sudah mejalankan proses bisnis Procurement. Kinerja rantai pasok tapioka di Kecamatan Dolok Masihul tidak konsisten dengan nilai konsistensi rasio (CR) sebesar 0,12. This research was conducted in June to July 2023. The purpose of this study was to analyze the general description of the tapioca supply chain using the Food Supply Chain Networks (FSCN) model, to anlyze the performance of the tapioca supply chain in Dolok Masihul district, Serdang Bedagai Regency. To analyze the general description of the tapioca supply chain in the research area using the Food Supply Chain Network (FSCN) while to analyze the performance of the supply chain tapioca in the research area using the Analytical Hierarchy Process (AHP) method with the application Software Expert Choice 11 . The sample in this study consists of farmer (supplier), collecting traders cassava, tapioca agroindustri (factories/industries, tapioca traders, home industri. Consisting of 15 cassava farmers (supplier), 2 collectors/agents, 1 agroindustri, 7 tapioca traders, and 5 home industri (consumers). Based on the result of the research in general, the tapioca supply chain is already running in the district Dolok Masihul is a cassava farmer-intermediary trader-tapioca entrepreneur-tapioca trader-consumer. Judging from the process relationship businesses running in the research area have implemented business process procurement. The performance of the tapioca supply chain in Dolok Masihul district is inconsistent with a consistency ratio (CR) value of 0,12.en_US
