dc.description.abstractidentifikasi nutrisi daun dan daging buah black sapote (Dispyros dygina) atau sawo hitam dengan menggunakan metode SNI 01-2891-1992. Adapun sampel yang digunakan pada daun dan daging buah tumbuha black sapote dan parameter penelitian yaitu lemak total, karbohidrat, air dan protein. Hasil penelitian menunjukkan kandungan nutrisi pada daun memiliki kadar air 58,8 %, karbohidrat 1,95 %, lemak total 0.72 %, protein 87,26 %, ) dan pada daging buah memiliki kadar air 84,1 %, karbohidrat 2,31 %, lemak total 0.29 %, protein 1.05 %. Hal ini menunjukkan bahwa buah black sapote atau sawo hitam sangat cocok dikonsumsi dalam jangka panjang dan cocok dibuat dalam bentuk makanan olahan. to identify the levels of nutrients contained in the leaves and flesh of the black sapote plant (Dispyros dygina) or black sapodilla using the SNI 01-2891-1992 method. The samples used were the leaves and flesh of the black sapote plant and the research parameters were total fat, carbohydrates, water and protein. The results showed that the nutritional content found in the leaves and fruit flesh of black sapote or black sapodilla (Dispyros dygina) in the leaves had a water content of 58.8%, carbohydrates 1.95%, total fat 0.72%, protein 87.26%, ) and the fruit flesh has a water content of 84.1%, carbohydrates 2.31%, total fat 0.29%, protein 1.05%. This shows that black sapote or black sapodilla fruit is very suitable for long-term consumption and is suitable for making food preparations.en_US
