Abstract: | Jahe (Zangiber officinale) adalah tanaman rizoma yang tumbuhnya menjalar di bawah permukaan tanah dan dapat menghsilkan tunas dan akar baru dari ruas ruasnya, dan juga sangat populer sebagai rempah-rempah dan bahan obat. Dapat kita ketahuin Rasanya paling dominanya yaitu sangat pedas yang dapat disebabkan senyawa keton bernam zigeron (Matondang, 2005). Rumusan masalah dalam penelitian ini adalah : (1) Berapa besarnya nilai tambah jahe menjadi bandrek? (2) Berapa pendapatan dari usaha pengolahan nilai tambah jahe menjadi bandrek? Metode yang digunakan menggunakan data primer dan sekunder. Berdasarkan hasil analisis data Nilai tambah yang dihasilkan dari pengolahan Jahe menjadi Bandrek , yaitu sebesar Rp. 49.256.233 dengan biaya bahan baku yang digunakan sebesar Rp. 3.390.000 dan rasio nilai tambah sebesar 72% dalam 1 bulan proses produksi pengolahan jahe menjadi bandrek di Kecamatan Medan Tembung, Kota Medan, Provinsi Sumatera Utara. Pendapatan yang di peroleh dari usaha pengolahan jahe menjadi bandrek yaitu penerimaan dikuragi dengan biaya total produksi yaitu sebesar Rp. 27.120.000 dalam 1 bulan masa produksi. Hal ini dapat dibandingkan dengan gaji UMK (Upah Minimum Kabupaten/Kota) yang berlaku di Kota Medan yaitu sebesar Rp 3.642.117. Ginger (Zingiber officinale) is a rhizome plant that grows horizontally under the soil surface and can produce new shoots and roots from its nodes. It is also very popular as a spice and medicinal ingredient. Its most dominant taste is very spicy, which is caused by a ketone compound called zingerone (Matondang, 2005). The research problem formulated in this research includes: (1) What is the added value of ginger when processed into bandrek? (2) What is the income from the ginger processing business into bandrek? The method used involved primary and secondary data. Based on the data analysis, the added value generated from ginger processing into bandrek was IDR 49.256.233, with the raw material costs amounting to IDR 3.390.000, and the added value ratio was 72% in a one-month production process of ginger into bandrek in Medan Tembung Sub-district, Medan City, North Sumatra Province. The income earned from the ginger processing business into bandrek was calculated by subtracting the total production costs from the revenue, resulting in IDR 27.120.000 in one month of production. This can be compared to the applicable regional minimum wage (UMK) in Medan City, which is IDR 3.642.117. |
