Abstract: | Penelitian ini bertujuan untuk membandingkan kadar pemanis dalam bentuk glikosida pada gula stevia dan sukrosa pada gula tebu dari lima merek yang berbeda, dengan tujuan untuk mengevaluasi apakah stevia dapat menjadi alternatif pemanis yang lebih sehat dibandingkan gula tebu. Lima merek gula stevia yang diuji adalah Organa Stevia, Equal, Tropicana Slim, Gula Life is Sweet, dan Natural Sweetener. Sementara itu, lima merek gula tebu yang diuji meliputi Gulaku, Food Station, PSM, Walni, dan Sugar O. Penelitian ini dilaksanakan pada bulan Juli hingga September 2024 di Laboratorium PTKI (Politeknik Kimia Industri) menggunakan metode kuantitatif dan teknik titrasi untuk menentukan kadar glikosida pada stevia dan kadar sukrosa pada gula tebu. Hasil pengujian menunjukkan bahwa kadar glikosida tertinggi pada gula stevia terdapat pada merek Gula Life is Sweet, dengan kandungan glikosida sebesar 11,6 mg, sementara kadar sukrosa tertinggi pada gula tebu ditemukan pada merek Food Station, dengan kandungan sukrosa sebesar 17,36 mg. Analisis statistik dengan menggunakan uji t dan uji kontras menunjukkan bahwa perbedaan kadar pemanis antara kedua jenis gula tersebut tidak signifikan secara statistik. Oleh karena itu, meskipun kadar glikosida pada stevia lebih rendah dibandingkan dengan kadar sukrosa pada gula tebu, stevia tetap dapat dianggap sebagai alternatif pemanis yang lebih sehat, karena memiliki kandungan kalori yang sangat rendah dan tidak memengaruhi kadar gula darah secara signifikan. This study aims to compare the levels of sweeteners in the form of glycosides in stevia sugar and sucrose in cane sugar from five different brands, with the aim of evaluating whether stevia can be a healthier alternative sweetener compared to cane sugar. The five brands of stevia sugar tested were Organa Stevia, Equal, Tropicana Slim, Life is Sweet Sugar, and Natural Sweetener. Meanwhile, the five brands of cane sugar tested included Gulaku, Food Station, PSM, Walni, and Sugar O. This research was carried out from July to September 2024 at the PTKI (Industrial Chemical Polytechnic) Laboratory using quantitative methods and titration techniques to determine the glycoside content in stevia and the sucrose content in cane sugar. The test results showed that the highest glycoside content in stevia sugar was found in the Life is Sweet Sugar brand, with a glycoside content of 11.6 mg, while the highest sucrose content in cane sugar was found in the Food Station brand, with a sucrose content of 17.36 mg. Statistical analysis using the t test and contrast test showed that the difference in sweetener levels between the two types of sugar was not statistically significant. Therefore, even though the glycoside content in stevia is lower than the sucrose content in cane sugar, stevia can still be considered a healthier alternative sweetener, because it has a very low calorie content and does not affect blood sugar levels significantly. |
