Abstract: Penelitian bertujuan untuk mengetahui nilai tambah produk olahan kacang madu Hajjah Nimar di Kecamatan Medan Tembung, Kota Medan dan mengetahui kelayakan usaha pengolahan kacang madu Hajjah Nimar di Kecamatan Medan Tembung, Kota Medan. Lokasi penelitian adalah usaha pengolahan kacang madu Hajjah Nimar yang terletak di Jl. Pukat Banting 2, Kecamatan Medan Tembung, Kota Medan. Kacang Madu Hajjah Nimar merupakan distributor, dimana pengolahan kacang madu dilakukan oleh tempat usaha lain. Analisis data menggunakan analisis nilai tambah metode Hayami, sedangkan analisis kelayakan menggunakan metode rasio R/C. Hasil penelitian menunjukkan bahwa nilai tambah rata-rata pengolahan kacang tanah menjadi kacang madu per hari adalah Rp 99.102,91/kg dengan rasio nilai tambah sebesar 80,57 % > 50 % artinya nilai tambah tersebut tergolong tinggi. Berdasarkan nilai rasio NT pengolahan kacang tanah menjadi kacang madu sebesar 80,57 % (tinggi), maka pengolahan kacang tanah menjadi kacang madu perlu dipertahankan. Analisis kelayakan pengolahan kacang menjadi kacang madu dikperoleh nilai R/C rasio 2,15 lebih besar dari 1, sehingga disimpulkan bahwa usaha pengolahan kacang tanah menjadi kacang madu di daerah penelitian layak diusahakan. The study aimed to determine the added value of processed Hajjah Nimar honey peanut products in Medan Tembung District, Medan City, and to determine the feasibility of a Hajjah Nimar honey peanut processing business in Medan Tembung District, Medan City. The study location was the Hajjah Nimar honey peanut processing business located on Jl. Pukat Banting 2, Medan Tembung District, Medan City. Hajjah Nimar Honey Nuts is a distributor, with honey peanut processing performed by other businesses. Data analysis used the Hayami value-added analysis method, while the feasibility analysis used the R/C ratio method. The results showed that the average daily value-added of processing peanuts into honey peanuts was IDR 99,102.91/kg, with a value-added ratio of 80.57%, >50%, indicating a high value-added. Based on the NT ratio of 80.57% (high) for processing peanuts into honey peanuts, the processing of peanuts into honey peanuts should be maintained. The feasibility analysis of processing peanuts into honey peanuts yielded a R/C ratio of 2.15, greater than 1. Therefore, it was concluded that processing peanuts into honey peanuts in the study area is feasible.
