Abstract: Penelitian ini bertujuan untuk menganalisis rantai pasok dan nilai tambah pada agroindustri tempe di Kota Binjai dengan menggunakan pendekatan Food Supply Chain Network (FSCN) dan Analytical Hierarchy Process (AHP). Data dikumpulkan melalui wawancara, observasi lapangan, serta kuesioner kepada pelaku rantai pasok yang meliputi petani kedelai, produsen tempe, pedagang, dan konsumen. Analisis FSCN digunakan untuk mengidentifikasi struktur, pelaku, dan aliran utama dalam rantai pasok, sedangkan AHP digunakan untuk menentukan prioritas faktor yang mempengaruhi pengembangan agroindustri tempe di daerah tersebut.Hasil penelitian menunjukkan bahwa struktur rantai pasok agroindustri tempe di Kota Binjai terdiri dari empat pelaku utama, yaitu pemasok bahan baku Agen kedelai,agroindustry tempe,distributor tempe,pedagang tempe .sedangkan kendala utama yang dihadapi adalah keterbatasan modal dan fluktuasi harga bahan baku. Berdasarkan hasil analisis AHP, faktor yang paling berpengaruh terhadap pengembangan agroindustri tempe adalah ketersediaan bahan baku, teknologi produksi, dan dukungan pemerintah daerah. This research aims to analyze the supply chain and value-added aspects of the tempeh agroindustry in Binjai City using the Food Supply Chain Network (FSCN) and Analytical Hierarchy Process (AHP) approaches. Data were collected through interviews, field observations, and questionnaires distributed to key supply chain actors, including soybean farmers, tempeh producers, intermediaries, and final consumers. The FSCN method was applied to identify the structure, actors, and main flows within the supply chain, while AHP was used to determine the priority factors influencing the development of the tempeh agroindustry in the region.The results indicate that the supply chain structure of the tempeh agroindustry in Binjai consists of four main actors: raw material suppliers (soybean farmers), tempeh producers, intermediaries, and end consumers. The highest value-added occurs at the processing stage where soybeans are transformed into tempeh. The main challenges faced by the industry include limited capital and fluctuating raw material prices. Based on the AHP analysis, the most influential factors in developing the tempeh agroindustry are raw material availability, production technology, and local government support.
