Uji Cemaran Bakteriologis pada Saus Jajanan Bakso Bakar di Lingkungan Sekolah Dasar (SD) Kecamatan Medan Belawan

Abstract

English : This research was to determine the description of bacteriological contamination in meatball sauce at primary school (SD) in Medan Belawan District. This research was conducted descriptively by explaining the description of the types of bacteria found in the meatball sauce at primary school (SD) Medan Belawan District. Furthermore, the parameters observed were the number of colonies and types of bacteria that contaminated the grilled meatball sauce. The results showed that of the total 15 samples of meatball sauce, 14 samples were contaminated bacteria Escherichia coli, Klebsiella oxytoca, Proteus mirabillis, and Staphylococcus aureus. While 1 sample was contaminated non-pathogenic bacteria Staphylococcus epidermidis and Bacillus subtilis. Grilled meatball sauce used was not worth consuming because it did not meet the hygiene and sanitation requirements.

Japan Abstract : 本研究の目的は、メダンベラワン地区の小学校環境におけるミートボールスナックのソースの細菌汚染の状況を判断することである。研究は、小学校環境のミートボールソースで発見した細菌の種類の説明を記述することによって記述的に行われた。 観察されたパラメーターは、ミートボールソースを汚染したコロニーの数と細菌の種類であった。結果は、ミートボールスナックの合計15サンプルから、14サンプルが病原性細菌である大腸菌、クレブシエラオキシトカ、プロテウスミラビリス、および黄色ブドウ球菌で汚染されていることを示す。1つのサンプルは非病原性細菌、表皮ブドウ球菌および枯草菌で汚染されている。 使用されるソースは、衛生上の要件を満たしていないため、消費には適していない
