dc.description.abstractUD Dapur Reuni adalah sebuah perusahaan yang bergerak di bidang pangan, mulai dari chatering hingga pembuatan cookies. UD Dapur Reuni terletak di Jl. Mesjid no. 84 Helvetia timur, Medan Helvetia, Medan, Sumatera Utara. Dalam pembuatan cookies sendiri ternyata UD Dapur Reuni sama sekali tidak menerapkan sistem manajemen keamanan pangan, maka dari itu tidak adanya tujuan dari penelitian ini adalah menerapkan sistem manajemen keamanan pangan yang tertuju pada satu metode yakni Good Manufacturing Practices (GMP) dan memberikan usulan jika fakta dilapangan tidak sesuai dengan aspek yang tertera dalam GMP. Dalam penelitian ini akan dilakukan perbandingan, Proses dilakukan dengan mengidentifikasi penerapan GMP berdasarkan Peraturan Menteri Perindustrian tentang CPPOB. Kondisi lapangan disesuaikan dengan 18 aspek yang tertera pada Peraturan Menteri Perindustrian tentang CPPOB. Dari 18 aspek ditemukan 3 aspek penting yang belum sesuai dengan peraturan yang telah ditetapkan, maka dari itu diberikan beberapa usulan yang sesuai dengan aspek tersebut. Namun demikian secara keseluruhan meskipun UD Dapur Reuni belum memiliki sertifikat GMP, UD Dapur Reuni dalam kegiatan produksinya sangat memperhatikan mutu dari produk yang dihasilkan. UD Dapur Reuni is a company engaged in the food sector, from catering to making cookies. UD Dapur Reuni is located at Jl. Mesjid no. 84 East Helvetia, Medan Helvetia, Medan, North Sumatra. In making cookies, it turned out that UD Dapur Reuni did not implement a food safety management system at all, therefore the purpose of this research was to implement a food safety management system that was focused on one method, namely Good Manufacturing Practices (GMP) and provided suggestions if the facts on the field not following the aspects stated in the GMP. In this study, a comparison would be made. The process was carried out by identifying the implementation of GMP based on the Regulation of the Minister of Industry concerning CPPOB. Field conditions were adjusted to the 18 aspects stated in the Regulation of the Minister of Industry concerning CPPOB. From the 18 aspects there were 3 important aspects that had not followed based the regulations that had been set, therefore several proposals were given following these aspects. Overall, although UD Dapur Reuni had not had a GMP certificate yet, UD Dapur Reuni in its production activities paid great attention to the quality of the products produced.en_US
