Analisis Pengendalian Persediaan Bahan Baku Pembuatan Snack Box Menggunakan Metode Just in Time di CV Dapur Reuni

Abstract

CV Dapur Reuni berdiri sejak tahun 2009, perusahaan ini adalah perusahaan yang bergerak dibidang pangan dengan spesifik menerima jasa tempahan makanan seperti catering (Jasa Boga), salah satunya adalah snack box. Kelebihan persediaan bahan baku kerap kali terjadi, hal ini menyebabkan menumpuknya bahan baku hingga mengalami resiko rusaknya bahan baku tersebut. Bahan baku yang kerap kali mengalami penumpukanyaitu bahan baku yang kuantitasnya lebih dari 10 kg dan 500 butir, karena bahan baku ini yang paling besar kuantitas penggunaannya dalam pembuatan kue untuk snack box. Penelitian ini menggunakan Just In Time (JIT) sebagai metode penelitian. Tujuan dari penelitian ini adalah untuk mengetahui total biaya persediaan, dan rencana produksi serta kebutuhan dari setiap bahan baku 12 bulan mendatang. Analisis yang dilakukan adalah total biaya persediaan dan menganalisis rencana produksi menggunakan alat analisis trend garis lurus. Dari hasil penelitian menunjukkan bahwa rencana produksi yang didapatkan selama 12 bulan mendatang ialah pada bulan Jul-22 jumlah produksi yang diramalkan sebanyak 4108 box, Agu-22 sebanyak 4146 box, 4184 box pada Sep-22, 4221 box pada Okt-22, 4259 box pada Nov-22 , 4297 box pada Des-22, 4334 box Jan-23, 4372 box pada Feb-23, 4410 box pada Mar-23, 4447 box pada Apr-23, 4485 box pada Mei-23, dan sebanyak 4523 box pada bulan Jun-23. Dengan total ramalan produksi sebanyak 51789 snack box. Raw materials that often experience accumulation are raw materials whose quantity is more than 10 kg and 500 eggs, because this raw material is the largest in quantity used in making cakes for snack boxes. This study uses Just In Time (JIT) as a research method. The purpose of this study is to determine the total cost of inventory, and production plans and the needs of each raw material for the next 12 months. The analysis carried out is the total cost of inventory and analyze the production plan using a straight line trend analysis tool. The results of the study show that the production plan obtained for the next 12 months is in Jul-22 the number of predicted production is 4108 boxes, Aug-22 4146 boxes, 4184 boxes on Sep-22, 4221 boxes on Oct-22, 4259 boxes on Nov-22, 4297 boxes on Dec-22, 4334 boxes on Jan-23, 4372 boxes on Feb-23, 4410 boxes on Mar-23, 4447 boxes on Apr-23, 4485 boxes on May-23, and as many as 4523 boxes on Jun-23. With a total production forecast of 51789 snack boxes.
