Optimalisasi Produksi Tahu untuk Mengurangi Kelebihan Bahan Baku pada Usaha Pabrik Tahu Pak Ponimin Jl. Langgar Medan Polonia

Abstract

Pada usaha Pak Ponimin terjadi kelebihan bahan baku sehingga membuat terjadinya penumpukan bahan baku dikarenakan persediaan bahan baku yang dibeli oleh perusahaan tidak dibuat pengaturan yang tepat tentang jumlah bahan baku yang harus dibeli setiap produksi dilakukan Akibat dari kelebihan bahan baku tersebut dapat menimbulkan kelebihan persediaan bahan baku berupa biaya pemesanan dan biaya pembelian. Selain itu yang menyebabkan persediaan bahan baku yang tidak optimal adalah pemakaian bahan baku itu sendiri, dimana pemasok bahan baku perusahaan ini hanya dari 1 pihak saja dimana pemakaian bahan baku dilakukan tidak teratur. Tujuan penelitian ini untuk mengoptimalkan produksi tahu, mengurangi kelebihan bahan baku dan menentukan jumlah safety stock bahan baku pada usaha pak Ponimin. Penelitian ini menggunakan metode simpleks. Metode simpleks lebih mendasar pada pertimbangan subjektif atau intuisi dari pada data historis. Dalam hal ini ketepatan perhitungan produksi akan sangat tergantung dari kemampuan,pengalaman,pendidikan dan kepekaan orang yang melakukan perhitungan produksi. Diketahui hasil dari penelitian ini adalah jumlah persediaan bahan baku 2022 adalah sebesar 419.409,59 kg. Dimana hasil perhitungan ini didapatkan dari metode terpilih trend linier dengan nilai SEE sebesar 24.796,94 kg dan dengan safety stock adalah sebesar 23.040 kg dalam satu tahun dan rata-rata perbulan 1.920 kg. Dimana safety stock pada pesanan selanjutnya adalah sebesar 375 kg setiap minngu. Objective This research is to optimize tofu production, reduce excess raw materials and determine the amount of safety stock of raw materials in Pak Ponimin's business. This research using the simplex method. The simplex method is more fundamental to the considerations subjective or intuitive rather than historical data. In this case the accuracy of the calculation production will depend on ability, experience, education and sensitivity a person who performs production calculations. It is known that the results of this study are the total supply of raw materials for 2022 is 419,409.59 kg.
