Abstract: Produksi tahu di UKM Nusa Tahu Tempe masih menghadapi berbagai tantangan terkait efisiensi operasional, terutama dalam bentuk pemborosan (waste) waktu tunggu (waiting) dan transportasi (transportation). Tujuan penelitian ini untuk mengidentifikasi faktor penyebab pemborosan, menganalisis akar masalah menggunakan metode Lean Manufacturing, serta memberikan usulan perbaikan guna meningkatkan efisiensi produksi. Metode yang digunakan dalam penelitian ini meliputi pengukuran Cycle Time dan Lead Time, analisis Value Stream Mapping (VSM), Fishbone Diagram, serta optimasi tata letak menggunakan Systematic Layout Planning (SLP). Hasil penelitian menunjukkan bahwa setelah dilakukan perbaikan, total Lead Time berkurang sebesar 1,315.1 detik (5.7%), dengan efisiensi jarak perpindahan bahan meningkat 11.4% (19.6 meter) dan pengurangan waktu transportasi sebesar 47.4 detik (12.2%). Selain itu, penerapan Standar Operasional Prosedur (SOP) dan redistribusi beban kerja berhasil menurunkan idle time operator hingga 5-10%. Secara keseluruhan, efisiensi produksi meningkat hingga 7%, menjadikan Lean Manufacturing sebagai pendekatan yang efektif dalam mengurangi pemborosan dan meningkatkan kapasitas produksi UKM Nusa Tahu Tempe. The tofu production process at UKM Nusa Tahu Tempe still faces various challenges related to operational efficiency, particularly in the form of waiting waste and transportation waste. This study aims to identify the factors causing waste, analyze the root causes using the Lean Manufacturing approach, and propose improvement strategies to enhance production efficiency. The methodology employed in this research includes Cycle Time and Lead Time measurement, Value Stream Mapping (VSM) analysis, Fishbone Diagram, and facility layout optimization using Systematic Layout Planning (SLP). The findings indicate that after implementing improvements, the total Lead Time was reduced by 1,315.1 seconds (5.7%), with material movement efficiency increasing by 11.4% (19.6 meters) and transportation time reduced by 47.4 seconds (12.2%). Additionally, the implementation of Standard Operating Procedures (SOP) and workload redistribution successfully decreased operator idle time by 5–10%. Overall, production efficiency improved by 7%, demonstrating that Lean Manufacturing is an effective approach in minimizing waste and enhancing the production capacity of UKM Nusa Tahu Tempe.
