dc.description.abstractPenirisan minyak secara manual pada keripik pisang memakan waktu lebih lama dan masih menyisakan minyak yang berdampak pada tekstur dan umur simpan produk. Penelitian ini bertujuan mengembangkan dan menguji mesin peniris keripik pisang berbasis gaya sentrifugal. Metode eksperimen digunakan dengan variabel kecepatan putaran, waktu penirisan, dan kapasitas bahan. Hasil menunjukkan bahwa mesin ini efektif menurunkan kadar minyak sebesar 6% dalam waktu 1 menit. Hal ini berdampak pada meningkatnya kerenyahan serta memperpanjang umur simpan produk. Manual oil draining on banana chips takes longer and leaves residual oil, affecting the texture and shelf life. This study uses centrifugal force to develop and test an oil-draining machine for banana chips. The method applied was experimental, with variables including rotation speed, draining time, and material capacity. The results show that the machine reduced oil content by 6% in 1 minute, improving crispness and shelf life.en_US
