Abstract: Ketahanan Pangan adalah kondisi di mana semua orang pada setiap saat memiliki akses fisik, sosial, dan ekonomi terhadap pangan yang cukup, aman, dan bergizi yang memenuhi kebutuhan dan preferensi makanan mereka untuk hidup sehat dan aktif. Adapun tujuan dari penelitian ini yaitu untuk menganalisis pengaruh ketersediaan, akses serta kontribusi penyerapan pangan terhadap ketahanan pangan di Kabupaten/Kota surplus padi di Sumatera Utara. Penelitian ini menggunakan pendekatan deskriptif kausalitas dengan metode Partial Least Square Path Modeling (PLS-PM). Penelitian ini menyimpulkan bahwa Ketersediaan pangan memberikan pengaruh langsung yang terhadap ketahanan pangan di Kabupaten/Kota surplus padi di Sumatera Utara. Pertama, variabel laten akses pangan memberikan pengaruh langsung terhadap ketahanan pangan sebesar 0,895 dan pengaruh tidak langsung sebesar 0,533, sehingga total pengaruhnya mencapai 1,428. Kedua, variabel laten penyerapan pangan memberikan pengaruh langsung terhadap ketahanan pangan sebesar 0,656. Ketiga, variabel laten ketersediaan pangan memberikan pengaruh langsung terhadap ketahanan pangan sebesar 0,140 dan pengaruh tidak langsung sebesar 0,387, sehingga total pengaruhnya sebesar 0,527. Food security is a condition in which all people at all times have physical, social, and economic access to sufficient, safe, and nutritious food that meets their dietary needs and preferences for a healthy and active life. The purpose of this study is to analyze the influence of food availability, access, and the contribution of food absorption to food security in rice-surplus districts/cities in North Sumatra. This study uses a quantitative descriptive causality with the Partial Least Square Path Modeling (PLS-PM) method. This study concludes that food availability has a direct influence on food security in rice-surplus districts/cities in North Sumatra. First, the latent variable of food access has a direct influence on food security of 0.895 and an indirect influence of 0.533, so that the total influence reaches 1.428. Second, the latent variable of food absorption has a direct effect on food security of 0.656. Third, the latent variable of food availability has a direct effect on food security of 0.140 and an indirect effect of 0.387, resulting in a total effect of 0.527.
