Abstract: UMKM Karinee Bolen merupakan usaha mikro kecil menengah yang memproduksi roti bolen. Pada proses produksi UMKM ini masih mengahadapi berbagai tantangan terkait efisiensi operasional, khususnya pemborosan berupa waktu tunggu (waiting) dan produk cacat (defect). Penelitian ini bertujuan untuk mengidentifikasi sumber pemborosan, menganalisis akar permasalahan dengan pendekatan Lean Manufacturing serta memberikan usulan perbaikan guna meningkatkan efisiensi proses produksi. Metode yang digunakan adalah Lean Manufacturing dengan pendekatan Value Stream Mapping. Pemetaan dilakukan melalui Current Value Stream Mapping (CVSM) dan perancangan Future Value Stream Mapping, serta analisis akar permasalahan menggunakan Fishbone diagram. Hasil penelitian menunjukkan bahwa penerapan usulan perbaikan mampu menurunkan total Lead Time sebesar 2.640 detik (12,2%) pada proses produksi. Penyebab terjadinya pemborosan (waste) berdasarkan analisis fishbone diagram menunjukkan terdapat tiga tulang penyebab terjadinya pemborosan yaitu manusia (Man Power), metode (Methods), dan mesin (Mechines). The UMKM Karinee Bolen is a micro, small, and medium enterprise producing bolen bread. In its production process, this UMKM still faces various challenges related to operational efficiency, particularly waste in the form of waiting time and defective products. This study aims to identify sources of waste, analyze the root causes using a Lean Manufacturing approach, and propose improvements to increase production process efficiency. The method used is Lean Manufacturing with a Value Stream Mapping approach. Mapping was carried out using Current Value Stream Mapping (CVSM) and Future Value Stream Mapping design, as well as root cause analysis using a Fishbone diagram. The results show that implementing the proposed improvements can reduce the total lead time by 2,640 seconds (12,2%) in the production process. The causes of waste, based on fishbone diagram analysis, indicate three main causes: people (Manpower), methods (Methods), and machines (Mechines).
