| Abstract: | Industri makanan ringan tradisional, seperti opak, dituntut untuk mampu menjaga kualitas produk secara konsisten seiring meningkatnya permintaan pasar. Pabrik Opak Sun Jaya Mandiri masih menghadapi permasalahan kualitas produk yang nditandai dengan tingginya tingkat kecacatan selama enam bulan terakhir, yaitu sebesar 12,6%, dengan jenis cacat utama meliputi opak patah, menempel, kontaminasi, dan ketidaksesuaian bentuk. Kondisi tersebut menunjukkan bahwa proses produksi belum berjalan secara optimal dan memerlukan perbaikan yang sistematis. Penelitian ini bertujuan untuk menganalisis penerapan metode Six Sigma dalam meningkatkan kualitas produk opak di Pabrik Opak Sun Jaya Mandiri. Metode yang digunakan adalah Six Sigma dengan pendekatan DMAIC (Define, Measure, Analyze, Improve, dan Control). Pada tahap Measure, diperoleh nilai Defects Per Million Opportunities (DPMO) sebesar 142.000 dengan level sigma 2,57, yang menunjukkan bahwa kinerja proses masih berada di bawah standar kualitas yang diharapkan. Tahap Analyze dilakukan menggunakan fishbone diagram dan metode 5-Why untuk mengidentifikasi akar penyebab cacat, yang berasal dari proses pengeringan tradisional yang tidak stabil, metode pengangkutan yang kurang optimal, serta kebersihan lingkungan produksi yang belum terkelola dengan baik. Tahap Improve dilakukan dengan penerapan alat bantu poka yoke berupa rak penjemuran bersekat, tray pembatas, dan holder clamp, serta peningkatan prosedur sanitasi, pelatihan pekerja, dan standarisasi proses produksi. Tahap Control dilakukan melalui penyusunan SOP dan monitoring rutin. Hasil perbaikan menunjukkan penurunan nilai DPMO menjadi 68.500 dan peningkatan level sigma menjadi 3,04, yang menandakan peningkatan kualitas produk secara signifikan. Penelitian ini membuktikan bahwa metode Six Sigma efektif dalam mengendalikan cacat dan meningkatkan mutu produk opak secara berkelanjutan. The traditional snack food industry, including opak, is required to maintain consistent product quality in response to increasing market demand. Sun Jaya Mandiri Opak Factory has experienced quality problems, as indicated by a defect rate of 12.6% over the last six months. The main types of defects include broken opak, sticking between products, contamination, and non-uniform shape. These conditions indicate that the production process has not been operating optimally and requires systematic quality improvement. This study aims to analyze the implementation of the Six Sigma method to improve opak product quality at Sun Jaya Mandiri Opak Factory. The research applies the Six Sigma methodology using the DMAIC (Define, Measure, Analyze, Improve, and Control) approach. In the Measure stage, the initial Defects Per Million Opportunities (DPMO) value was 142,000 with a sigma level of 2.57, indicating that the process performance was still below the expected quality standard. Root cause analysis was conducted in the Analyze stage using a fishbone diagram and the 5-Why method, which identified unstable traditional drying processes, ineffective material handling methods, and inadequate production environment cleanliness as the main causes of defects. The Improve stage involved implementing poka-yoke tools such as partitioned drying racks, separator trays, and holder clamps, as well as enhancing sanitation procedures, worker training, and process standardization. The Control stage was carried out through the development of standard operating procedures (SOPs) and routine monitoring. The results showed a reduction in DPMO to 68,500 and an increase in the sigma level to 3.04, indicating a significant improvement in product quality. This study demonstrates that the Six Sigma method is effective in controlling defects and improving opak product quality sustainably. |
