Abstract: Penelitian ini bertujuan untuk menganalisis pengendalian kualitas produk tempe pada UMKM Tempe Asril Malay dengan menggunakan metode Six Sigma. Pendekatan yang digunakan adalah metode DMAIC (Define, Measure, Analyze, Improve, Control) untuk mengidentifikasi jenis ketidaksesuaian, menghitung tingkat ketidaksesuaian, serta memberikan usulan perbaikan terhadap proses produksi. Data yang digunakan merupakan data produksi bulan Agustus 2025 dengan total produksi sebanyak 23.816 pcs dan jumlah ketidaksesuaian produk tempe yang dihasilkan 1.395 pcs. Jenis ketidaksesuaian yang ditemukan yaitu kemasan rusak, tekstur lembek, dan warna kehitaman. Hasil perhitungan menunjukkan nilai Defects Per Million Opportunities (DPMO) sebesar 19.523,6 dengan level sigma 3,56. Faktor penyebab utama ketidaksesuaian produk berasal dari proses produksi seperti pencucian, peragian, dan fermentasi yang belum terkendali dengan baik. Perbaikan dilakukan menggunakan pendekatan 5W+1H dengan fokus pada kebersihan lingkungan, takaran ragi, dan pemeriksaan kemasan. Tahap Control dilakukan untuk memastikan hasil perbaikan berjalan konsisten. This study aims to analyze the quality control of tempeh products at UMKM Tempe Asril Malay by applying the Six Sigma method. The approach used in this research is the DMAIC method (Define, Measure, Analyze, Improve, and Control) to identify types of defects, calculate the level of nonconformities, and propose improvement actions for the production process. The data used in this study were production data from August 2025, with a total production of 23,816 pieces and 1,395 defective tempeh products. The types of defects identified include damaged packaging, soft texture, and darkened color. The results of the analysis show that the Defects Per Million Opportunities (DPMO) value is 19,523.6 with a sigma level of 3.56. The main factors causing product defects originate from the production process, such as washing, fermentation, and inoculation stages that are not well controlled. Improvement efforts were carried out using the 5W+1H approach, focusing on environmental cleanliness, accurate yeast measurement, and packaging inspection. The Control phase was implemented to ensure that the improvement results are maintained consistently.
