Abstract: Penelitian ini bertujuan untuk meningkatkan efisiensi produksi di UMKM Ris One Bakery yang menghadapi kendala pemborosan (waste), khususnya pada waktu tunggu (waiting). Metode yang digunakan adalah Lean Manufacturing dengan pendekatan Value Stream Mapping (VSM) untuk memetakan kondisi aktual (Current State) dan kondisi usulan (Future State), serta Fishbone Diagram untuk menganalisis akar penyebab masalah. Hasil penelitian melalui perancangan Future Value Stream Mapping menunjukkan perbaikan signifikan, di mana total Lead Time produksi berhasil diturunkan dari 7.500 detik menjadi 2.820 detik. Penurunan ini dicapai dengan mengeliminasi aktivitas yang tidak bernilai tambah (non-value added) dan memperbaiki aliran proses. Kesimpulannya, penerapan Lean Manufacturing terbukti efektif dalam meminimalkan waste dan meningkatkan efisiensi operasional produksi di UMKM Ris One Bakery. This study aims to improve production efficiency at Ris One Bakery, a small and medium-sized enterprise (SME) facing waste constraints, particularly in terms of waiting time. The method used is Lean Manufacturing with a Value Stream Mapping (VSM) approach to map the actual condition (Current State) and the proposed condition (Future State), as well as a Fishbone Diagram to analyze the root causes of the problems. The results of the research through the Future Value Stream Mapping design show significant improvements, where the total production Lead Time was successfully reduced from 7,500 seconds to 2,820 seconds. This reduction was achieved by eliminating non-value-added activities and improving process flow. In conclusion, the application of Lean Manufacturing proved to be effective in minimizing waste and improving production operational efficiency at Ris One Bakery.
