Potatoes (Solanum tuberosum L.) are the third most important crop in the world after rice and wheat for human consumption. Potatoes originate from the Andean highlands of South America. The International Potato Center (CIP) states that this region is a center for potato biodiversity conservation. Potatoes are tuber plants and are classified as short-lived plants. They grow as shrubs and creepers and have rectangular stems. The stems and leaves are red or purple. The tubers begin as branches that penetrate the soil, which serve as storage sites, causing them to swell. These tubers can produce shoots that will eventually form new branches.
