Abstract: | Andaliman (Zanthoxylum acanthopodium) is one of the wild plant that usually grows in nothern Sumatera, Indonesia. Batak people use the fruit as spices in their traditional cuisine like Arsik and Naniura. Chemical content of andaliman fruit such as flavonoids, alkaloids, saponins and terpenoids are useful for health. This study aimed to observed the effect of andaliman on the growth of Escherichia coli and Staphylococcus aureus. Parameters measured was the diameter of inhibitory zones in 24-hour incubation period. Extraction was conducted by using maceration method and the solvent used was ethyl acetate. The extract concentration consists 20%, 40%, 60% and 80% and 0% as a control. Based on the data andaliman extract significantly inhibited Escherichia coli and Staphylococcus aureus growth (P<0.01). The largest inhibition zone 12,6 mm of Escherichia coli and 13 mm of Staphylococcus aureus revealed in the cocentration of 80%. |
Description: | Andaliman (Zanthoxylum acanthopodium) adalah salah satu tanaman liar yang biasanya tumbuh di Sumatera Utara, Indonesia. Suku Batak biasa menggunakan buahnya sebagai rempah dalam masakan tradisional mereka seperti Arsik dan Naniura. Kandungan senyawa kimia buah andaliman yang telah diketahui diantaranya flavonoid, alkaloid, saponin dan terpenoids yang bermanfaat untuk kesehatan. Penelitian ini bertujuan untuk melihat pengaruh ekstrak buah andaliman terhadap pertumbuhan bakteri Escherichia coli dan Staphylococcus aureus. Parameter yang diukur adalah zona hambat pertumbuhan bakteri dalam masa inkubasi 24 jam. Buah andaliman diekstrak menggunakan pelarut semipolar etil asestat dengan metode maserasi. Konsentrasi ekstrak yang digunakan adalah 20%, 40%, 60% dan 80% serta kontrol (0%). Hasil yang didapat sangat signifikan (P<0.01) dimana rata-rata zona hambat maksimum pada konsentrasi 80% yaitu 12,6 mm pada Escherichia coli dan 13 mm pada Staphylococcus aureus. |
