dc.description.abstractPabrik Tahu Dk 16 merupakan sebuah usaha home industry yang memproduksi tahu seperti tahu sumedang, usaha Pabrik Tahu Dk 16 terletak di jalan Batang Kuis, Desa Bakaran Batu Dusun III No. 100, Sumatera Utara. Usaha memproduksi tahu sehari sebanyak 5.200 biji tahu ( 130 papan). Masalah yang sering terjadi pada Pabrik Tahu DK 16 adalah kecacatan pada produk, ada 3 jenis cacat yang sering terjadi yaitu: gempet,patah tengah dan patah pinggir. Tujuan Penelitian ini untuk mengurangi produk cacat pada tahu sumedang dengan mengidentifikasi proses penggorengan pada tahap memasukan tahu mentah kewadah penggorengan,waktu penggorengan dan teknik pengadukan tau sumedang dengan menggunakan metode Seven Tools. Data yang dianalisis adalah data produk cacat yang terjadi mulai 07 Juni sampi 10 Juli 2023. Metode Seven Tools memeiliki beberapa tahapan secara garis besar ada 7 tahapan,yaitu :1. Check Sheet (Lembar Periksa), 2. Cause and Effect Diagram ( Diagram sebab akibat), 3. Pareto Analysis ( Diagram Pareto), 4. Control Chart ( Peta Kendali), 5. Scatter Diagram ( Diagram Sebar), 6. Process Flow Chart ( Diagram Proses), 7. Histogram. Hasil presentasi cacat yang diperoleh patah tengah 31,38%, patah pinngir 56,86%, dan gempet 11,76 %. Hasil ini diharapkan dapat membantu Pabrik Tahu DK 16 melakukan perawatan peralatan,melakukan perbaikan metode dan meningkatkan ketelitian karyawan dalam bekerja agar produk cacat pada tahu sumedang dapat berkurang. The Dk 16 Tofu Factory is a home industry business that produces tofu such as Sumedang tofu, the Dk 16 Tofu Factory business is located on Jalan Batang Kuis, Bakaran Batu Village Dusun III No. 100, North Sumatra. The business produces 5,200 tofu seeds a day (130 planks). The problem that often occurs at the DK 16 Tofu Factory is defects in the product, there are 3 types of defects that often occur, namely: chipped, broken in the middle and broken at the edges. The aim of this research is to reduce defective products in Sumedang tofu by identifying the frying process at the stage of putting raw tofu into the frying container, frying time and the technique of stirring Sumedang tofu using the Seven Tools method. The data analyzed is data on defective products that occurred from June 7 to July 10 2023. The Seven Tools method has several stages, in general there are 7 stages, namely: 1. Check Sheet, 2. Cause and Effect Diagram, 3. Pareto Analysis, 4. Control Chart, 5. Scatter Diagram, 6. Process Flow Chart (Process Diagram), 7. Histogram. The defect presentation results obtained were 31.38% middle fracture, 56.86% edge fracture, and 11.76% gempet. It is hoped that these results can help the DK 16 Tofu Factory carry out equipment maintenance, improve methods and increase employee accuracy in working so that defective products in Sumedang tofu can be reduced.en_US
